Guilt-Free Portobello Mushroom Pizza

This might be the easiest and quickest pizza you’ll ever make. We all love pizza, but pizza doesn’t always love us back. AMIRITE?

I won’t bore you with seven paragraphs about our family and the seasons and how fat our cat has become in the last year like other food blogs. Let’s get down to business.

Portobello mushrooms have a meaty texture that makes for a very filling gluten-free / keto pizza option. They’re a great source of fiber, B-vitamins, and they’re rich in minerals.

Ingredients

  • Portobello Mushroom

  • Your favorite pizza sauce or marinara

  • Mozzarella

  • Pepperoni and/or whatever your favorite pizza toppings are (fresh basil, bell pepper, tomatoes, etc)

Getting Started

  1. Preheat oven to 350 degrees (Fahrenheit)

  2. Remove the stem from the portobello mushroom.

  3. Bake mushroom for 5-7 minutes in the preheated oven.

  4. Pull mushroom out of oven. Flip oven settings to broil.

  5. Fill the cap (inside area of mushroom) with your pizza sauce and top with mozzarella cheese. Place pizza toppings over the cheese.

  6. I recommend for this next step using a wired cooling rack on top of a rimmed cookie sheet. Placing mushroom on the rack let’s the mushroom-pizza juices drain into the cookie sheet and keeps your pizza from getting soggy.

  7. Slide your portobello pizza (on cookie sheet) right under the broiler. Leave for a a few minutes until cheese is melted.

Once you pull your pizza out—-it’s ready to enjoy! Takes less than 15mins!!!!

Deliciously Easy & Healthy GF Cookies

Many times I struggle with naming my recipes, and this time was no different. I chuckled though at the thought of GF (Gluten Free) in the title being mistaken for “Girlfriend” Cookies. But if I’m being honest, Girlfriend Cookies has a certain sassy ring to it, and I like it!

These cookies are a family fave! I’ve been making them since Eliza could eat solid foods. Here’s what I love about them:

  • High in fiber

  • Contains a good amount of protein

  • Very filling (make you and your kiddos full, so they’re a great snack)

  • Contain a large amount of your recommended daily intake of vitamins, minerals, and antioxidants like Manganese, Phosphorus, Potassium, and Magnesium.

And the best part is, these cookies are so easy to make. Your kids can even help you!

Ingredients:

  • 2 Ripe Bananas

  • 1 Cup of Oats

  • 2 Tbs of Peanut Butter

  • Handful (or two) of Dark Chocolate Chips

Getting Started

  1. Preheat oven to 375 degrees fahrenheit and line a baking sheet with parchment paper.

  2. Mash 2 ripe bananas in a bowl. This is the major binding agent for your cookies. You can use a fork for this, or a potato masher if you have one.

  3. Pour in a cup of oats.

  4. Put your 2 tablespoons of peanut butter in the bowl. Creamy peanut butter is preferred as it will also help bind the other ingredients together.

  5. Mix all 3 ingredients together well. I use a fork for this.

  6. Grab a handful or two of dark chocolate chips and sprinkle them in your bowl. Mix ingredients together so chocolate is evenly(ish) distributed throughout.

  7. Here’s the fun part. Do you want fun shaped cookies? If so, grab a cookie cutter and use it to form your cookies on the cookie sheet. These cookies don’t rise—I repeat, these cookies do not rise. So make sure you make each cookie the size you’d like to eat them as. There’s no rules on what your cookies need to look like so take some creative control here.

  8. Once you have cookies formed, put in the oven for 17mins.

Make sure to let your GF cookies cool for a couple minutes before taking a bite. This recipe yielded 7 large star-shaped cookies and we ate them in less than 10mins!!!

Keto Burger Bites

These juicy, cheesy, and saucy mini burgers are guaranteed to have your mouth watering. There’s two parts to this simple and quick recipe, the burger, and the magic sauce.

The burgers are the easiest part! Here’s what you need:

  • Ground Beef (80/20)

  • 1 Egg

  • 1 Tsp Garlic Powder

  • 1 Tsp Onion Powder

Put all the ingredients in a bowl and mix together with your clean hands. Next you can form into little bite-sized burgers. I used a protein-powder scoop we had lying around to make perfectly-round burgers. You can also use a small mason jar lid or cookie cutter to form your burger shapes.

Grab a pan, throw in some avocado oil or butter and place your burgers in the warm pan to cook.

Next, you gotta make that SAUCE baby!!!

Sauce Ingredients:

  • 1/4 cup of Avocado Mayo

  • 2 Tbs Mustard

  • 2 Tsp Red Wine Vinegar

  • 1 Tsp Garlic Powder

  • 1 Tsp Onion Powder

  • 1 Tsp Pickle Juice (from the jar)

  • OPTIONAL: 1 Tsp of Organic Ketchup (I personally like the sauce best with a little bit of ketchup, but I’ll leave this up to you!)

Combine all these ingredients into a bowl and, stir it up! I let my 3 year old do this part because she loves to help in the kitchen. She may or may not have been eating the sauce with a spoon while stirring it.

Once you have flipped your burgers and they are cooked to your liking, sprinkle a bit of cheese on top, throw a pan lid on your pan so that cheese melts, and THEY’RE DONE!

Top your mini burgers with the sauce you just made (YUMMM!!!), lettuce, and a pickle!
