It’s cheesy, it’s crusty, it’s slightly garlicky, and sauvory AF.
It’s my super secret and easy recipe for Keto Pizza. Essentially the dough is made up of mozzarella, cream cheese, egg, garlic powder, coconut flour, and blessed by the keto angels themselves.
3/4 cup coconut flour
1 1/2 cups of Shredded mozzarella
3 tablespoons of cream cheese

First, preheat your oven to 425. Now, grab a microwaveable bowl and toss in a cup and a half of mozzarella and the cubed cream cheese. Microwave for one minute. Stir it up with a fork, and toss back into the microwave for an additional 30 seconds. Next toss in your coconut flour, an egg, and few sprinkles of garlic powder. I found that mixing this together with damp hands (yes, damp! Wet your hands first) works best. Once you’ve mixed the ingredients all together, I form into a ball and put on top of parchment paper. You can form your pizza dough with your hands, or put an additional slice of parchment paper on top and roll it out with a rolling pin. This crust will rise a bit, so keep that in mind when determining how thick you want your crust. Once you have your desired shape, put your pizza dough on top of a cookie sheet covered in parchment paper. Don’t forget to poke some holes in the pizza dough crust with a fork, this prevents your crust from bubbling. Finally, toss in the oven for 8mins. Pull it out and check it after 8mins, then throw it back in for another 5mins.
The fun part is next! Spread your favorite sauce on top, a thin layer of sharp cheddar, some mozzarella cheese, and pepperoni and/or your favorite toppings. Pull your pizza up off the parchment paper and put on the oven racks directly. This lets your crust crisp up a bit on bottom and get that golden color. Let cook for about 2mins or until your cheese is melted.
