One of my biggest challenges as a mother is making sure my kids have a well balanced diet. Mornings can be stressful, especially before coffee.
A University of Pennsylvania study found that kids that eat eggs for breakfast feel fuller longer and consume less calories at lunch than the kids who ate cereal or oatmeal for breakfast. For me, this is what keeps my girls out of the fridge all day. Seriously, they tryna steal food constantly.
A Cardiff University study revealed that children (ages 9 to 11) are 2x more likely to score higher than average grades if they start the day with a healthy breakfast.
It doesn’t take a genius to figure out that a healthy breakfast is essential to our kiddos.
But let’s get back to the whole stressful mornings thing. Yeah, who has the time or energy to cook a 5 star breakfast? It ain’t me. This is why I make a ton of these breakfast bites ahead of time. I keep them in the fridge and pop them in the microwave for 20-30 seconds in the morning.
That’s what I like to call EFFICIENT.
Eggs (a dozen or so)
Nonstick Cooking Spray
Cooked Meat (Sausage, bacon, ham, Turkey lunch meat, Chorizo, whatever you want)
STEP 1: Preheat oven to 375 degrees
STEP 2: Whisk your eggs and a little water in a large bowl. Add salt and pepper to your liking.
STEP 3: Spray your muffin pan with nonstick cooking spray
STEP 4: Pour eggs into muffin pan. I fill each compartment about halfway with the egg mixture.
STEP 5: Add cheese to each muffin slot. We love cheese so I’m pretty generous in this step.
STEP 6: Toss in a couple veggies and your cooked meat (if you’re into that) in each compartment.
STEP 7: Throw em’ in the oven for 20mins until cooked and golden brown
These can be kept in the fridge for 4 days or so. They’re healthy, yummy, and super simple!!!
